I was given a recipe that is knock your socks off GREAT>
it is the best sauce for Ribs but could be used on chicken as well. It does have some heat and is very tasty.. My question is....can anyone tell me if it would be safe to can it.
RIB CHIPOTLE SAUCE
2 tbsp olive oil
1 med onion, finely chopped
2 garlic cloves, finely chopped
3 to 4 chipotle peppers
1 tbsp sauce from chipotle peppers
1 cup ketchup
1 cup beer or chicken stock, divided use
2 tsp chili powder
2 tsp dry mustard
3 tbsp packed brown sugar
2 tbsp red wine vinegar
2 tsp Worcestershire sauce
salt to taste.
Heat oil in a pot set over medium heat. Add onion and garlic and cook until tender.
Place chipotle peppers, tbsp sauce from peppers, ketchup and 1/4 cup beer or stock in a food processor and blend and peppers are completely pureed.
Add this mixture, the remaining 3/4 cup beer or chicken stock, and the rest of the sauce ingredients to the pot and gently simmer 30 to 45 minutes.
