ISO: Need ideas for a Christmas dinner

What would be a good sauce to use over Chicken Cordon Blue? I am planning to serve these at a large sit down meal. Need a simple quick menu. I thought about using peas and carrots as the veggie and a gelatin salad. Any ideas for a simple dessert? There could be as many as 150. It will be for a dinner theatre prior to a Christmas musical at church.
