ISO: Passover Potato Stuffing for Turkey

...need a fluffy (not sticky) "Pesadicha" potato stuffing for turkey, just like Bubbie's! It should contain schmaltz to flavor the basic (potato, onion and egg}ingredients. I've attempted the recipe that I watched my grandmother create without the benefit of measuring tools, but the results always seem to turn out sticky, no matter how much I dry the potatoes. And, also, the raw potatoes always seem to turn a dirty beige, even with a little citric acid added. Please help. if you can.
