ISO: Pickled Garlic

At a recent Home Show I questioned the representative from Gilroy Farms about their pickled Garlic recipe. I have always placed the garlic in boiling water for approximately 1 minute before adding to vinegar & spice mixture.
He stated that they do not heat or boil the garlic. They place it directly into the vinegar mixture. Does anyone have this recipe? What is the difference?
