ISO: question about serving multiple salads for 50

I am responsible for 3 salads to serve 50 people at a class reunion on July 14th. I recently catered a anniversary party for 100 and made 100 -130 servings of several salads and found I had too much food leftover. If I am making 3 salads: 1 - 3-Bean Salad, 1 - macaroni salad and one spinach and fresh berry salad do I make less of each? Or do I make 50 - 60 servings and hope they all get eaten? they are providing their own meats for a BBQ. Don';t want to make too much but absolutely hate the idea of running out of food. Help please
