ISO: Question for Gladys -

Dear Gladys - I'm going to include this message from my sister regarding their recent trip to your island - I'm wondering if you would know the appetize that she is referring to, and if you would have recipes.

"It was our first afternoon there (Thursday) and D and I were hungry but didn't want to eat a meal because we were having those heavy hors d'oeuvre in a couple of hours. So we went to the hotel lounge and ordered a planters punch and told them we wanted something to nibble on but nothing too heavy because we were going to eat in a couple of hours. The chef brought us a large brandy snifter 3/4 filled with hummus, with salsa layered on top of the hummus, and several paper thin deep-fried plantain strips, cut the long way, stuck into the hummus to dunk with.

This was one of those surprise dishes you get every once in awhile that are so incredibly delicious you just can't believe it. The hummus didn't taste like any hummus I've ever had - it was creamier, smoother and more flavorful. The salsa was more tasty than what we're used to, and the plantain strips were crisp and wonderful. The whole concoction was out of this world."

Any ideas what she is referring to?
