ISO: Question for Manyhats

Manyhats - With small children in the family, I worry about using uncooked eggs. Am I right in thinking that the egg in this recipe does not get cooked? Do you have any ideas for making a good crust for this without the egg? I tried it a while back, just leaving the egg out, and it tasted GREAT, but the crust was a crumbly mess. Any help would be appreciated.
