Creme de Menthe Squares

1-1/4 cup butter or margarine
1/2 cup unsweetened cocoa
3-1/2 cup powdered sugar, sifted
1 beaten egg (pasteuirized egg product)
1 tsp. vanilla
2 cup graham cracker crumbs
1/3 cup green creme de menthe
1-1/2 cup semi sweet chocolate pieces

Bottom layer:
in saucepan, combine 1/2 cup of the butter and cocoa powder. Heat and stir until well blended. Remove from heat; add 1/2 cup of the powedred sugar, the egg, and vanilla. Stir in graham cracker crumbs. Mix well. Press into the bottom of an ungreased 13"x9"x2" pan.

Middle layer: Melt another 1/2 cup of the butter. In small mixer bowl, combine melted butter and creme de menthe. At low speed of electric mixer, beat in the remaining 3 cups powdered sugar 'til smooth. Spread over the chocolate crumb layer. Chill 1 hour.

Top layer: In small saucepan, combine the remaining 1/4 cup butter and chocolate pieces. Cook and stir over low heat 'til melted. Spread over the mint layer. Chill 1-2 hours. Cut in small squares. Store in refrigerator.

Makes aprox. 96 squares
