Black Bean Roll-Ups
(10 Servings)

1 8-oz pkg cream cheese, softened
1 cup (4 oz) shredded Monterey Jack cheese (with or without jalapeno peppers)
1/2 cup sour cream
1/4 tsp onion salt
1 cup canned black beans, rinsed and drained
3 10-inch flour tortillas
Salsa

Mix cheeses, sour cream, and onion salt with electric mixer on medium speed until well-blended. Place beans in blender or food processor container fitted with steel blade; cover. Blend or process until smooth. Spread thin layer of beans on each tortilla; spread cheese mixture over beans.

Roll tortillas up tightly, wrap in plastic wrap, and refrigerate for 30 minutes. Cut into 1/2-inch slices. Serve with salsa.
