I cut off stems, and lower leaves, let cold water run over chokes unill clean then I put in a pot of water that has salt and quite a bit of vinegar added to it, almost a fourth of a quart bottle. Boil until done, drain and I serve with melted butter. Vinegar does something that lemon juice doesn't. Brings out the flavor of the choke... You either like this method or you don't.
