ISO: Re: ISO: Shepherd's Pie

Hi.... I don't have a recipe, but make it with leftovers.

Use either left over pot roast or you can brown 1 lb of hamburger
Leftover veggies or frozen veggies of choice
Mushrooms
Mashed Potatoes
Gravy

If using leftover pot roast, shred or cut meat in chunks and layer in the bottom of a large casserole or dutch oven. If using hamburger, brown and drain. I like to season the hamburger with garlic, and basil, and sometimes dried parsley. Layer roasted veggies on top (carrots, and onions from pot roast). I also use canned grean beans, cooked candied carrots, and corn, or anything else in the fridge. Slice mushrooms (or use canned mushrooms) and place on top of veggies. Pour about a cup of gravy over everything and then spread mashed tatoes on top. Dab with butter and sprinkle with paprika. Pop in the oven for about 30 to 45 minutes at 350.

This is a great dinner to use up leftovers. I usually make lots of mashed potatoes for one meal and then use the leftovers for shepard's pie another night. It's easy to brown hamburger, season it to taste and then layer on canned or leftover veggies. A packaged dry gravy mix also works great. My husband and kids love this meal. It may not taste like the one in the restaurant, but is hearty and filling! The best shepherd's pie I ever made was with a leftover pot roast made by a friend just after I had my baby. The pot roast was roasted with prunes and the gravy was lovely....it was even better over the shepherd's pie!!!
