HERE'S MY RECIPES FOR ZUCCHINI:
#1 IF YOU'RE GONNA PLANT ZUCCHINI...MAKE SURE YA HAVE A LOT OF REALLY GOOD FRIENDS.
#2 THE SALVATION ARMY IS VERY GRATEFUL FOR DONATIONS. MY HUSBAND AND I ALWAYS MAKE AN EXTRA LARGE GARDEN FOR JUST SUCH NEEDS.
HOWEVER HERE ARE SEVERAL RECIPES I USE FOR ZUCCHINI AND OTHER SQUASHES.

STUFFED BAKED ZUCCHINI
ONE OR MORE LARGE ZUCCHINI'S CUT LENGTHWISE. PUT IN OVEN @350 FOR 10 MIN. STEAM IT WITH WATER. LET COOL AND SCOOP OUT INSIDES. FRY UP SAUSAGE AND MIX WITH SOME BOX STUFFING (COUS COUS CAN BE ADDED FOR A VARIATION AND IS REALLY GOOD WITH THE STUFFING.) MIX TOG. ADD ONION, CORN....WHATEVER ELSE YOU WANT. STUFF SHELL OF ZUCCHINI AND PLACE IN COVERED ROASTING PAN ON RACK WITH A LITTLE WATER. COVER TOP WITH TOMATO SLICES, CHEESE STRIPS AND STRIPS OF BACON COOKED HALF WAY IS OPTIONAL.

IF THE SQUASH REALLY GETS OUT OF HAND, YOU MIGHT CONSIDER CANNING IT OR PUREEING IT IN A BLENDER FOR SOME EXCELENT COLD SOUPS. JUST PLACE THE BLENDED SQUASH IN FREEZER BAGS FOR NOW AND FREEZE.

HERE'S ANOTHER THAT YOU CAN USE WITH OTHER SQUASHES BESIDES ZUCCHINI:
4 EGGS, BEATEN
1 TSP. SALT
1 LB. GRATED JACK CHEESE
1 1/2 LBS. SQUACH CUT IN 1/2" SLICES
1/2 CP. MILK
3 TBSP. FLOUR
1 TBSP. BAKING POWDER 1/2 CP. BREAD CRUMBS
WHATEVER SEASONING OR OTHER VEGIES YOU WISH TO ADD.
COOK SQUASH IN VERY SMALL AMOUNT OF WATER FOR 5 MIN. DRAIN AND COOL. PUT EGGS, MILK, SALT, BAKING POWDER AND FLOUR IN LG. BOWL AND MIX WELL. STIR SUCCHINI OR OTHER SQUASH AND CHEESE INTO LIQUID. PLACE IN GREASED 2 QT. CASSEROLE. SPRINKLE WITH BREAD CRUMBS. DOT WITH BUTTER. BAKE @350 FOR 35 MIN. CHECK FOR DONENESS WITH A KNIFE AS YOU DO FOR A CUSTARD.

DON'T FORGET YOU CAN GRILL THEM AS KABOBS WITH GREEN BELL PEPPER, MUSHROOMS, CHERRY TOMATOES, ONIONS ETC.
DON'T LET THEM NASTY SQUASH GET THE BEST OF YOUZ!! HA HA!
