Here are two more recipes from the ladies at my church.
Squash Casserole
3 cups cooked summer squash
1 can cream of mushroom soup
1 cup grated onion
2/3 cup bread crumbs
1 cup grated cheese
2 tablespoons margarine
2 eggs, well beaten
salt
pepper
Mix together squash, soup, onion, bread curmbs, grated cheese, margarine, eggs, salt and pepper to taste. Place in baking dish. Sprinkle with paprika.
Bake at 350 degrees F for 20 minutes. Serves 8 to 10.
Summer Squash Casserole
2 lb. summer squash
4 tablespoons melted butter
4 tablespoons cream
3 eggs, beaten
1 medium onion, chopped
1/2 teaspoon salt
1 teaspoon Worcestershire sauce
1/2 cup buttered bread crumbs
Wash squash. Cut into thin slices and cook 15 minutes in 1/4 cup water, covered. Drain. Add butter, cream, onion, salt and Worcestershire sauce. Put mixture in 1 and 1/2 quart casserole. Sprinkle with buttered crumbs.
Bake in 350 degree F oven for 30 minutes. One-half cup grated cheese may be added during last 5 minutes of baking.
