ISO: re: sponge cake help - I have information for you

Good morning. Peapaw, it is difficult to render a opinion about a baked product if we do not know of the recipe & it's directions.... However Peapaw, The use of "SELF-RISING FLOUR" is a NO-NO!!!! in a sponge cake.
Just from what you have mentioned you most likely over-baked the cake or your baking pan is to large for the amount of batter that you placed into it. Also I might add check-out the oven temp. for accuracy before you bake this cake again. Anyway Peapaw, if you like further help post the recipe maybe we can help you. Good luck & have a nice day.
