ISO: Recipes Using Apples and Caramel

I would like to collect receipes featuring these two marvelous ingredients. I had some cheesecake over the weekend with apples and caramel that I would love to duplicate (had it in a restaurant). Pie recipes and any other great desserts would be great. Thanks in advance.
