CHRISTMAS CHERRIES
From: Beverly
I would like to share 2 cookies receipts of my mothers with you. The only problem with them is that they disappear too fast.
1/2 cup butter, softened
1/4 cup sugar
1 jar maraschino cherries, drained, chopped
1 cup flour
1 tablespoon lemon juice
1 1/2 teaspoons grated lemon rind
1 egg (separate and save the white)
Chopped nuts (enough for rolling cookies in)
Candied cherries, halved
Preheat oven to 325 degrees F.
Mix butter and sugar; stir in the cherries. Add the flour, lemon juice and rind, and unbeaten egg yolk; mix. Chill dough about 30 minutes.
Roll into small balls and then roll in unbeaten egg white, then roll in the chopped nuts. Press a candied cherry half into top of each (cut side down).
Bake in 325 degrees F oven for 15-20 minutes.
Eat and Enjoy!
CRESCENT COOKIES
From: Beverly
There are a lot of crescent cookies in the world, but I have not found one better than this one in over 40 years.
2 cups flour
3 tablespoons powered sugar
1 cup butter, softened
1 cup chopped nuts
1 teaspoon vanilla
Powdered sugar
Preheat oven to 375 degrees F.
Mixing with your hands, blend flour and powered sugar into butter. Add nuts and vanilla.
Roll into short finger lengths and shape into crescents.
Bake in 375 degree F oven for 15-20 minutes.
While they are still warm, roll in powdered sugar.
