ISO: Recipes Using Avocado

Looking for sweet avocado pie recipes, maybe some soup, or what ever recipes for avocado... Local store had a special on Bacon breed avocadoes, and I froze at least 20 avocado's worth of pureed (treat it with 1/4 teaspoon powdered ascorbic acid [Vit. C] mixed thoroughly with 1 quart avocado puree[well mashed will do], and you can freeze it just fine).

I make a mean guacamole and now wish for other stuff to use avocado in.

For years I had watched my dad eat mashed avocadoes on toast with a little salt and pepper. I said YUK, but not I say YUM! The equal of butter, I think, on toast, except it will make your toast soggier sooner!
