ISO: Salad dressing with a Mexican flavor

Hello, everyone! Can someone provide me with a salad dressing recipe that has a Mexican flavor? I am hostessing a super bowl party this Sunday and will be serving shrimp as an appetizer, chili rellenos casserole, beef tamales, salsa verde, salsa rojo, frijoles refritos, Spanish rice, tortillas and flan. I just want to make a simple green salad but all of my dressings come out tasting Greek, Italian or French! I hope that one of you can provide a great salad dressing recipe for me.
