Recipe: Taco-Style Alaska Salmon Pasta

TACO-STYLE ALASKA SALMON PASTA

1 pound pasta, uncooked
1 (14 3/4 oz.) can Alaska salmon, drained and flaked
2 cups salsa
1 teaspoon ground cumin
salt and pepper (to taste)
FOR SERVING:
2 ounces low fat cheddar cheese, grated
4 ounces low fat sour cream
4 tablespoons lightly crushed tortilla chips
4 teaspoons chopped fresh cilantro

Cook pasta according to package directions; drain.

Mix salmon, salsa and cumin in a large saucepan; stir and heat through.

Add the warm pasta; stir and heat through again. Taste, adding salt and pepper as necessary.

TO SERVE:
Dish into 4 warm serving bowls. Top each portion of pasta with 1/2 oz. of cheese, 1 oz. sour cream and sprinkle with 1 tbsp. of tortilla chips and 1 tsp. of cilantro.

Makes 4 servings
