ISO: storing raspberry or lemon curd

Is it safe to store homemade lemon or raspberry curd at room temperature if it is poured into sterile Jars and processed in a hot-water bath? I am concerned that because of the eggs and butter it would be unsafe, but have come across several recipes that say to store processed curd in a dark cool place. Is it safe?
