ISO: Vac-Pacing cheese

Your request about vac-pacing blue cheese is interesting. I have vac-packed cheese now, for about 2 years, and find that almost any cheese, except cottage cheese, will keep at least a year in the fridge (not the freezer). I tried blue cheese about 3 months ago, and it is still good! Love the vac-pack process!
