ISO: what is the white sauce on Pasta House Manicotti ?

I have been looking for this for ages -- any help appreciated

Pasta House Manicotti

I can make cheese manicotti, with the maniaria sauce, but what is the white sauce on top of it made of it's not just plain white sauce ???
