BBQ BEEF CHUCK STEAK
1 cup finely chopped onion
1 cup ketchup
1/3 cup packed brown sugar
1/3 cup red wine vinegar
1 tablespoon Worcestershire sauce
1/8 to 1/4 teaspoon crushed red-pepper flakes
1 beef chuck seven-bone steak, about 2 pounds
Combine onion, ketchup, brown sugar, vinegar, Worcestershire sauce and red-pepper flakes in a medium bowl.
Place steak and 1 cup marinade in a resealable plastic bag. Turn to coat. Marinate steak in refrigerator 6 hours or overnight, turning occasionally. Refrigerate remaining marinade.
WHEN READY TO COOK:
Remove steak and discard marinade in bag. Place steak over medium coals. Grill uncovered, 15 to 18 minutes for medium-rare to medium, turning occasionally.
Place remaining marinade in small saucepan. Bring to a boil, reduce heat and simmer 10-15 minutes, stirring occasionally. Serve with steak.
