ISO: yeast bread with spinach and cheese inside

When I lived in New Orleans, I had some wonderful bread from a local bakery: It was a dome-shaped yeast bread, but mostly hollow inside, with a layer of spinach and cheese inside on the bottom. Delicious! I have never seen a recipe that comes close. Does this ring a bell to anyone? Thank you!
