loin or back of an animal. Usually we use the loin for steaks because it is good, tender beef. I had never heard about the LOMO SALTEADO (like saut ), but I like the recipe very much and I am going to copy it for further use. We call the salteados stir frys, and when we do a stir fry we usually use the WOK. I do my salteados with chicken, fish, filet mignon or churrasco (Argentinian cut for the loin.)
