Us devotees to this garlic paste would never stop going to the one place we can get it. It's out of this world!

The place is called Zankou Chicken and it's typical mediterranean type fast food (i.e., gyro, schwarma, falafel, hummus, baklava, etc.) Their specialty is roasted chicken, but it's definitely their garlic paste that brings us back again and again. It's creamy white with ton's of what looks and tastes like finely minced garlic. The base is not mayo although it does react a little like to metal and glass if left sitting out, so there may be mayonnaise in it. There are no herbs or any other colors in it. Just thick creamy white, salty, garlicky paste. I buy extra paste from them and put it on sandwiches and steaks at home.

All that said, I'd love to be able to make it in my own kitchen and be grateful to anyone who could show me how.
