ZANKOU GARLIC SAUCE
6 cloves garlic
1/2 tsp salt
1/2 cup olive oil
1 juice of 1 lemon
Grind garlic to paste in mortar or small food processor.
Work in salt, olive oil and lemon to create mayonnaise-like consistency.
The sauce is then best if rubbed on the warm chicken.
I use it with all kinds of things because I love Garlic. My ex and I ate there so much and one day he asked the regular girl at the counter for the recipe, she told us without much hesitation (although she did not give me measurements as she did not really speak much English) so I find it weird that the Times had the wrong recipe. This recipe is very close but I believe that it will always be best if made by the restaurant. Anyway here it is ....I experimented a few times before it came out good....so have fun and enjoy.
