Thanks! Will the quiche taste dry if baked then frozen?

It should be fine unless you store it for a long time or if it isn't wrapped well and gets freezer burn. Also, don't overbake it - there will be some carry over cooking when it comes out of the oven and more cooking when you reheat it. You may have different results with different recipes and filling ingredients. For instance, vegetables that get softer when frozen and thawed, like zucchini or mushrooms will have a different texture than when 'fresh baked'.
Much depends on your recipe so it would be difficult to give any gaurantees. Your best bet is to make your recipe now as an experiment. Bake, cool, cut in slices, then wrap individually and freeze. Then you can thaw a couple of slices to test the results and keep the rest frozen for another time.
