Thank You: Good ones, Jeanne

Misc.
I've already printed out the oatmeal cookie recipes and got the ingredients to try the second one.

I also will be making some oatmeal bread tomorrow - DH says "will I like that?" Time will tell!

I printed out the meatloaf and chicken recipes, although while in the hospital he was served chicken breasts served in different sauces FIVE days in a row - so now he's on a chicken strike, never having been fond of chicken white meat anyway - he always wants the dark (naturally)meat.

I'm finding that so many of my favorite things to cook just need modifying re: the types and quantities of fat and salt I use. So far no complaints. He wanted a grilled cheese sandwich for lunch, so I used dark bread, sprayed the outer layers with spray margarine, and used no-fat singles with sliced onions and tomatoes. It didn't taste ANY different than the way I used to make it and he was happy.

I do so appreciate your keeping an eye out for recipes for us.

Believe it or not, tonight he wanted to go out to our favorite little local restaurant, where previously we would order their Monday night special of Fried Grouper - tonight we asked if they would broil it, and he had the broiled, and I had the blackened - and we both agreed it was the best tasting fish we've had in a very long time - well seasoned - the chef did a great job.
My blackened version was also broiled and was spicy and flavorful without stripping the mucus membranes from my mouth!

I had told our server that DH was 10 days away from open heart surgery, and she looked at him and said - what a gift you've been given - don't waste it - WOW - brought both of us to tears once again - all the emotions are so close to the surface still.

Thanks again, Jeanne - love, June
