I'll go ahead and stick it in the freezer. I'm making a Chinese buffet for my son's high school graduation, and I've got enough making me nervous without worrying about the ginger going bad! I'll post the successful recipes that didn't come from this site in the first place (just a few!). Thanks for the info!
