SCALLOPED SALMON
1/3 cup butter or margarine
1/2 small onion, chopped
2 cups Ritz cracker crumbs, divided use
1 (7 oz.) can salmon, drained (reserve juice)
Milk
Preheat oven to 375 degrees F.
Saute onion in butter. Pour butter and onion over cracker crumbs and toss. Place half of mixture in bottom of pie pan.
Spread drained salmon on top of crumbs. Pour last of crumbs on top.
Add milk to reserved juice to equal 1 cup. Pour over salmon mixture.
Bake in 375 degree oven for 20 to 30 minutes.
SCALLOPED SALMON (dry mustard, thyme, lemon juice)
1 (7 oz.) can salmon*
1/2 to 3/4 cups milk
1 1/4 cups common cracker crumbs
1/3 cup margarine, melted
1/2 tsp. dry mustard
1/4 tsp. thyme
1 tbsp. lemon juice
1/4 tsp. seasoned salt
Fresh ground pepper
1 tbsp. onion, finely chopped
Preheat oven to 400 degrees F. Grease a 9-inch pie plate.
Drain the salmon liquid into a 1 cup measure and fill cup with milk. Set aside.
Toss together the crumbs, margarine, mustard, lemon juice, thyme, salt, pepper and onion and put half of this mixture in prepared pie plate.
Flake the salmon over the crumbs. Pour on the combined milk and salmon liquid and top with remaining crumbs.
Bake in a 400 degree oven 20 to 25 minutes.
*Tuna can be used using 1/2 teaspoon salt.
SCALLOPED SALMON
(1 qt milk? may not need full amount)
1/2 lb. box saltine crackers, crushed
1 large can red or pink salmon
2 medium onions, sliced thin
1/4 stick (1/8 cup) butter
1 quart milk, warmed
Preheat oven to 350 degrees F. Grease a 2 quart casserole.
Make layers of crushed crackers, salmon, onions and butter.
Pour preheated milk over the ingredients.
Bake uncovered at 350 degrees F for 1 hour.
SCALLOPED SALMON (with 1 egg)
Milk, enough to moisten
saltine crackers
1 egg
1 small onion, finely chopped
1 large can pink salmon
Preheat oven to 350 degrees F. Grease an oven proof bowl.
In separate bowl mix 1/2 cup milk, crumbs from 6 crackers, egg, and cut up onion.
Open salmon separate large bones and discard. Mix all ingredients together and put in casserole dish. Add more milk if necessary to moisten. Sprinkle more cracker crumbs on top.
Bake in 350 degree F oven for 1 hour or until brown on top.
