I have a question, I was planning on cheating and buying canned pumpkin puree, any suggestions on converting the weight? Are there any pumpkin recipes "safe" to can?

A four pound pumpkin yields four cups of pumpkin puree.

The USDA does not recommend the home canning of pumpkin butter or any mashed or pureed pumpkin or winter squash. If you make pumpkin butter, refrigerate or freeze it instead. The thickness, acidity, and water activity of home-canned pumpkin products are critical factors in its safety. Pumpkin and winter squash are low acid foods capable of supporting the growth of the bacteria that causes botulism. Source: Ohio State University Extension
