Misc.No, Ille Flottante I know well from regular visits to France. What we had in Costa Rica was definitely a very light sponge (sometimes it had a butter icing topping, sometimes not) which sat (rather than floated) on a bed of thin custard. I've had a go at making it myself from a standard fatless sponge, but it was a bit squidgey!!
