These recipes look awesome and I am sure Luis will love them.
But the funny thing is...they are still not the one I am thinking of.
Maybe it is called empanadas de yuca. Let me describe it for you: you need a dough that is made mostly of yuca, I am quite sure there is some wheat flour in there too, and maybe even an egg, you roll it out into circle, and fill it with a ground meat mixture, then you fold over the circle to make a semi-circle, then you seal the edges. It is then shallow-fried, one side at a time. It makes a little package and the dough is quite chewy and excellent. There is nothing else quite like it!
Do you have a recipe for that dough? Luis says they are not called empanadas de yuca, but cannot remember what I am referring to. Ha! That's a man for you! I think we have exhausted all other possible names, though, so maybe that's it.

I love those other recipes you posted and will be sure to surprise Luis with them, maybe for Father's Day coming up in a few weeks.
