It is so good to hear from Luis and from you and the boys. My life has changed a great deal after retirement. Now I try to do all my favorite things and also those others that might help someone. At my 57 years it is time for a little enjoyment and exciment in my life. But no real job dear friend, with the exception of those special cases that I represent as a favor for my friends.
The two books I have from Santo Domingo are "Mujer 2000"by Silvia H. de Pou and the second volume of the same book. There is a recipe in the first volume that I will translate for you. Those pastelones the yuca are quite different from the ones in Puerto Rico, that are stuffed with ground meat filling (Picadillo).
PASTELON DE YUCA
3 lbs yuca
1 1/2 tb. baking powder
1 cup of milk
3 eggs
1/2 of 1/4 lb butter
1/2 cup vegetable oil
2 tb ground parmesan cheese
Boil the yuca in salty water. Mash it after it is cooked. With the mashed yuca still hot, add the butter, baking powder, eggs, (one by one), cheese, vegetable oil and milk. After properly mixed, bake in a greased Pyrex at 350 F, for 35 or 40 minutes.
Ms. Pou said in her book that the Pastel n can be stuffed with cheese or stewed beef or chicken.
