I needed to make 2 dozen apple-oatmeal muffins yesterday and needed a buttermilk substitute, and fast! I searched the net and lo and behold there it was! Instead of one cup of buttermilk, I used one cup of skim milk and 1 Tbs. of lemon juice. I saved on money, time AND fat! Thank you, Susan, you're a genius!
