I wish that someday our gifted chefs will give the opportunity to us, simple mortals, to receive a basic training in the cooking arts. Here in Puerto Rico, there is a subdivision of the American Culinary Institute, but the curriculum is available to already practiced students. Anyway, I have learned a lot from other gifted chefs (as you are) that post here in the RecipeLink & also from the study & practice of cookbook recipes for many years. But nothing can substitute direct training by professionals.
