A Lebanese friend of mine does something interesting with tahini...

When she makes semolina cake (she uses Cream of Wheat cereal), she greases the cake pan with tahini, instead of butter or oil. When the cake is done, she pours a sugar- or honey-syrup on top. I've had this several times at her house, and I'm still trying to pry the recipe out of her! Will post when I get it!
