Recipe: Homemade Baked Corn Chips and Quick Nachos

Appetizers and Snacks
NO-FRY TORTILLA CHIPS

12 small corn tortillas*
Nonstick cooking spray
Kosher salt

Heat oven to 400 degrees F.

Cut tortillas into quarters; place in single layer on cookie sheet. Spray lightly with cooking spray.

Bake 3 minutes or until golden brown, then turn chips over. Lightly spray second side of chips and bake 3 minutes more or until golden and crisp.

Sprinkle with salt and serve at once. Serve with soups or as a snack.

VARIATION:

QUICK NACHOS

Sprinkle finished chips with grated cheese and return for 5 additional minutes baking.

*Buy the softest, freshest corn tortillas you can find.

Makes 2-4 servings
