A nut substitute

Personally, I love nuts in baked goods, but my husband despises them. Some recipes, especially for brownies, don't seem to work very well if they call for a lot of nuts and you leave them out. However, I have found a substitute which has never failed to provide the missing bulk without affecting the final taste: just substitute half as much toasted wheat germ. For example, if the recipe says 1 cup chopped nuts, use 1/2 cup wheat germ instead. You can use raw wheat germ and get good results too, but sometimes you can sort of feel wheat germ flakes in your teeth. If you use toasted, the wheat germ is pretty undetectable.
