An Easy Pan Coating For All Your Baking!

Summertime just arrived (after 7-8 months of rain), so have been working on backload of recipes. I've been doing a tremendous amount of baking, too, so much so that I have relied on this "rub" for darned near everything.

The idea comes from a professional baker who created this (much like the woman who created the original "paint" for typing errors): because she needed it. So, here goes:

Pan Coating
Yield: 1/2 Cup

3 Tbsps flour
8 Tbsps (1/2 cup) vegetable shortening
3 Tbsps cornstarch

Mix ingredients together; store in a jar with a tight fitting lid in refrigerator.

This has an unlimited shelf life. I make up a batch at a time and keep it in a petri dish (weird, but it was clean at the time) in the icebox, right next to my jar of granulated yeast.

I suppose this could be made with a butter-flavored type of vegetable shortening; however, I never got around to trying this version when I had the product on hand.
