Another Italian trick.... (re: sauce not sticking to pasta)

... is to stop cooking your pasta in the water and drain it about 1-1/2 minutes before it is done and then finish cooking it in the sauce for a few minutes. The pasta absorbs the flavor of the sauce and it melds together well.
