Recipe: Pineapple Nut Bread (using whole wheat flour, raisins, and walnuts)

PINEAPPLE NUT BREAD

1 cup flour
3/4 cup whole wheat flour*
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1 (8 1/2 ounce) can crushed pineapple in juice
3/4 cup brown sugar
2 eggs
3 tablespoons oil
1/2 cup raisins
1 cup walnuts, chopped

Preheat oven to 350 degrees F. Grease a 9x5-inch loaf pan.

Stir together flours, baking powder, salt, and baking soda; set aside.

Mix together pineapple (undrained, brown sugar, eggs, and oil. Stir into flour mixture until blended (do not overmix). Stir in walnuts and raisins. Pour into prepared. pan.

Bake for 30-40 minutes. Cool in pan for 10 minutes and remove to cool completely.

*You can substitute 3/4 cup regular flour for the whole wheat flour if desired.
