Misc. This is the info I have on berries: Either use a hot pack by heating berries in boiling water for 30 seconds and drain, fill jars and cover with hot juice, leave 1/2 inch headspace. Process in water bath 15 minutes for pints or quarts.
For cold pack: Fill jars with any raw berries, shake down gently while filling.Cover with hot juice,syrup, or water, leaving 1/2 inch headspace. Process pints 15 minutes, quarts 20 minutes. You may also process in pressure canner for 8 minutes hot pack at 6 lb. pressure or raw pack 8 minutes pints,10 minutes quarts at 6lb.pressure. I would personally,pack in raw berries,make a syrup with sugar and water, pour over, seal and process. The sugar will be dissolved and will also help keep the berries a bit more firm in the jars. As for not making a mess with berries, think that is just part of canning. Use a bleach solution to remove any stains. Hope this is helpful. Happy New Year to you, too.
