canning greens
Misc. TMy food preservation books do have instructions for canning greens, although they do specify to fill jars loosely.I do see where that could be a problem with packing them too tight. I would think that it would be best to blanch and freeze, but since I do not care for them, it is not something I have ever done. I just get some fresh now and then for my husband. Oh, the processing times are quite long, too. At ll lb. pressure, pints are 70 minutes, 90 for quarts. That is as much as meat.
