canning meat

I have always been told and also read in many books that under no conditions should meat be canned anyway other than in a pressure cooker. Even then, it has to be cooked for over an hour so I would not attempt to do it in a water bath. I would be very concerned how safe it would be. You might check with your county extension service and see if they have updated info on this.
