Request: Canning 1x1 pieces of beef, venison, in jars.

Does anyone have a recipe for canning meat in jars, in a hot water bath? I don't have a pressure cooker. I heard you can put the meat in the sterilized jars, seal them, fill to the rim with water, boil for an hour, with 1 tablespoon salt and 3 onion slices added. Say it will keep for years. Does this really work? And does anyone have anymore suggestions for spicing the meat, etc? Thanks a lot.
