Canning Venison

I have canned the venison meat now for 5 years. I use a pressure cooker because it takes a lot less time. My grandmother gave me this hint for canning any kind of meat she used 1 Tablespoon of vinager it takes out the gamey taste. I also add chopped onion and 1 tsp. of salt to every jar. I tdoes last quite awhile I only would keep it for 1 year. For suggestions on using this kind of venison i use it in barbequed beef recipes, chili, ghoulash and stew.
