Canning safety
Misc.Sorry, but unless a recipe is designed and tested for safety, they should not be canned. There are many great recipes in the Ball Blue book and also any of the USDA publications. I know these to be reliable. Not all recipes online or in books are safe to can. If you can other recipes, you can be at a risk for food borne illness, including botulism.
You can buy a Ball Blue book for about $5- $6.
There are also good sites online from universities (click here) that are safe to can.
In order for a recipe to be safe, it must contain enough acid, be the proper density, etc.
