ISO: Canning anything with a pressure canner
Misc.Hi.
Is it possible to can literally anything with a pressure canner? I have a recipe for a chipotle salsa that I'd like to can. There's no heating ivolved in the recipe. Does this matter? Can I just can it anyway? I also have a recipe for a Chinese brown garlic sauce that I'd like to make a huge batch of and can for convenience. It contains garlic, ginger, soy sauce, veggie stock, and rice-wine vinegar. How long should I process for? Should I use boiling water or room temperature water to start? My main question is - can you can anything with a pressure canner? Thanks,
Dan.
